Breakfast Bowl Meal Prep
This easy breakfast bowl can be prepped in less than 30 minutes and I have a feeling this will become one of your go to meal prep recipes too.
Servings: 6
Ingredients
3 medium sweet potatoes,cubed
1 dozen eggs, scrambled
1 red onion, diced
1/2 pound ground turkey, browned and drained
1/2 pound sausage, browned and drained
1 TBSP paprika
Salt & pepper to taste
Instructions
Cube your sweet potatoes and dice your red onion and lay out on a parchment paper lined pan, spray or drizzle with olive oil and sprinkle paprika, salt and pepper and bake at 425° for 30 minutes, stirring every 10 minutes.
Scramble you eggs, brown your meat and drain fat, and then once sweet potatoes are done, start creating your bowl. I did sweet potatoes and onion on bottom topped with meat and then eggs. The morning of, I warmed bowl and topped with pick de gallo and avocado and enjoy!
