Thai Peanut Noodle Salad

Your whole family is going to love this Thai inspired peanut Palmini noodle salad that is perfect for summer when you’re looking for a delicious dinner without turning on the oven!

Servings: 1-2

Ingredients

1 packet of Palmini angel hair hearts of palm pasta

(Optional) cooked chicken

2 bell peppers, chopped

1 cup cucumbers

1 cup shredded carrots

1 cup red cabbage, chopped

1/2 cup green onions, chopped

1/2 red onion, chopped

Top with sesame seeds and crushed peanuts

Peanut dressing:

1/2 cup peanut butter

1 TBSP maple syrup

1 TBSP coconut aminos or soy sauce

1 tsp apple cider vinegar

1/2 cup water (or more to desired texture)

Instructions

Put all salad ingredients together and mix well and top with peanut salad dressing and enjoy!
