Sweet Potato Skillet
This sweet potato skillet makes for an incredible breakfast meal prep that your whole family will love.
Servings: 6
Ingredients
1 cup red onion, diced
2 pounds of ground beef
1 TBSP chili powder
4 tsp ground cumin
Salt and pepper, to taste
4 cups sweet potatoes, cubed
20 oz can of fire roasted diced tomatoes
8 oz canned diced green chilis
1/2 cup water
1 cup of shredded cheese (I do vegan since #dairyfree)
Instructions
In a deep skillet, spray with a cooking spray- I used avocado oil, and add the ground beef with the diced onion, 1/2 TBSP chili powder, 2 tsp cumin, salt and pepper, garlic and let simmer until all meat is browned and then drain and set aside.
Chop 4 cups of sweet potatoes and then add to skillet with diced tomatoes, green chilis, 1/2 TBSP of chili, 2 tsp cumin, salt and pepper, and add 1 cup of water, stir and let simmer for about 20 minutes or until potatoes are fork tender.
Add your ground beef mixture and stir until well combined, top with cheese and then allow to melt before serving.
