Apple Curry Chicken Salad

This apple curry chicken salad was so good, my husband has asked for it on repeat since. It’s so simple, yet full of fiber and packed with protein and the perfect salad.

Servings: 4

Ingredients

4 cooked chicken thighs, chopped (or a rotisserie chicken, shredded)

4 apples, chopped

1/4 cup avocado mayonnaise

1/4 cup Dijon mustard

2 TBSP curry

Salt and pepper, to taste

Instructions

Combine everything together and enjoy!

For my baked chicken, I lay out chicken thighs on parchment lined pan and then sprinkle with salt, pepper, and paprika and bake at 400° F for 20 minutes. Easy peezy and still juicy!

On my plating method, add your favorite non starchy veggie and this is a perfect lunch!
