Quinoa Salad
This one pot quinoa salad is going to be your family’s new favorite side dish.
Servings: 4-6
Ingredients
2 cups cooked quinoa (cook according to package)
1 can chickpeas, drained & rinsed
2 cups cherry tomatoes, diced
2 cups cucumbers, diced
2 cups bell peppers, diced
1 red onion, diced
1/4 cup olive oil
2 lemons, juices
Salt & pepper, to taste
Instructions
Cook quinoa according to package and then add remaining ingredients to the same pot. Toss gently to combine and enjoy. That’s it!
