Creamy Zucchini Salad

This creamy zucchini and squash salad is one of our favorite side dishes to any meal. Pair with chicken, steak, salmon, really anything. It’s just so good.

Servings: 2

Ingredients

4 zucchini and/or yellow squash
Tsp salt or to taste
TBSP paprika
2 TBSP olive oil

Coconut Sauce:
1 cup coconut milk
3 TBSP Italian seasoning
1 TBSP tomato paste or 3 TBSP tomato sauce
2 TBSP minced garlic
Salt to taste
(optional) 1/2 tsp red pepper flakes

Instructions

Preheat the oven to 400° degrees.

Cut zucchini into cubes and drizzle with olive oil, salt, and paprika and put in the oven on lined pan at 400° for 20 minutes.

While zucchini is roasting, put together coconut sauce.

Add all sauce ingredients into pan over medium heat and bring to a low simmer. When the zucchini is done baking, add zucchini into coconut sauce and combine well.

This combination is so delicious. Serve warm with your favorite protein and I can’t wait to hear what you think.
